City of Antioch Wins 1st Place for the 7th Annual Contra Costa County Mayors’ Healthy Cook-off

The city of Antioch walked away with the 1st place winning trophy for the 7th Annual Contra Costa County Mayors’ Healthy Cook-off held at Todos Santos Park in Concord, California.

The winning team was represented by Mayor Wade Harper, Executive Chef Jose Aguilar of Lone Tree Golf and Event Center, Sous Chef Juan Gutierrez from the 2015 Sustainable Hospitality Pathway at Mount Diablo High School.

The winning dish included:
Appetizer: Stuffed eggplant with grilled Tofu, goat cheese and greek yogurt topped with anaheim chilis and balsamic reduction
Salad: Roasted red beet salad with farmers’ greens, goat cheese and a citrus vinaigrette topped with lemon zest and balsamic glacé
Entrée: Stuffed chicken breast with quinoa, leek served with a smoke cherry tomatoes sauce
Dessert: A shutter glass filled with farmers’ market red and green grapes, peaches, red plum, red beet juice and a touch of coconut oil.
