What you will need:
- 1 white or yellow onion, coarsely chopped
- 2 cups tomatoes, diced or fresh
- 1 can garbanzo beans
- 1 can kidney beans
- 1 package lentils
- 1/2 cup cooked kale, optional (or spinach, chard)
- 1 package ‘Simple Organic Spicy (or Regular) Chili Seasoning’
- 1-2 tbsp extra virgin olive oil
Instructions:
Cut up onions into large chucks (about 2-inch pieces).
Saute onions on MEDIUM in a large pot.
Add remainder of ingredients.
Let simmer on LOW for 1/2 hour.
